I care for a man with Parkinson's and I use the small styrofoam balls you can get from the $1 store and stick the utensil through the middle. It gives him more to grip and makes eating so much easier and less messy
You want want to focus on serving more finger foods and forget about the utensils all together if they frustrate your loved one. There really are a lot of finger food options when you come to think about it.

Sometimes even prompting a loved one by putting food on the fork and removing unnecessary other utensils simplify the activity
Ie put the fork in the potato and put it in their hands sometimes helps
